The beautiful yellow-orange color of papaya (also known as papaw around the world) provides beta-carotene plus lycopene, a carotenoid. Lycopene has been linked to preventing damage to cells and DNA. The shape of the lycopene molecule is in part what makes it so effective at getting rid of free radicals (which can damage cells and DNA). Drink up and enjoy this refreshing kefir! Serves 1 (1½ cups)
Combine the papaya and kefir in a blender and blend until smooth. Add the ice and blend until frozen and smooth.
Serve, or store in the refrigerator for up to 3 or 4 days.
