Sweet Potato Cereal

There are few things as great as milk and cereal. And there are a few things even better—when your milk has no dairy and your cereal has no sugar, wheat, gluten, or chemicals. Yes, we live in a world where all things are possible, and it starts with sweet potato cereal. (Now, if only I could go back in time and swap this for my sugar-Os!)

SERVES 1

1 small sweet potato, diced small

Vata

1–2 cups almond milk

2 tbsp almond butter

2 tbsp chia seeds

pinch of cinnamon

Pitta

1–2 cups coconut milk

2 tbsp coconut flakes

12 cup chopped berries

2 tbsp hemp seeds

pinch of ground cardamom

Kapha

1–2 cups flax milk

12 cup sliced strawberries

2 tbsp pumpkin seeds

pinch of cinnamon

pinch of ground cardamom

pinch of ground ginger

1 Preheat the oven to 400°F. Spread sweet potato chunks in a single layer on a parchment-lined baking sheet. Bake for 20 minutes, until tender and beginning to brown. Let cool to room temperature.

2 Place the cooled sweet potato chunks in a cereal bowl and pour non-dairy milk over top. Add the toppings for your Dosha and eat with a spoon!
