Durga is the fierce warrior goddess whose name means “the invincible one.” After eating this bowl, you may start channeling her. Protein-packed quinoa, hemp seeds, and hummus are balanced by cooling spinach, cucumber, and parsley. Add the endurance-building healthy fats from avocado, cashews, and tahini, and you’ve got yourself ready for battle.
SERVES 1
1⁄2 cup cooked quinoa
2 cups baby spinach (Steamed for Vata & Kapha)
4 baby beets, steamed and sliced
4 cherry tomatoes, sliced (Option to omit for Pitta)
1⁄2 cup sliced cucumber
1⁄2 avocado, thinly sliced
2 tbsp Edamame Hummus or Chickpea Meat
2 tbsp finely chopped parsley
1 tbsp hemp seeds
2 tbsp Herbal Cashew Tzatziki
1 Spread quinoa in a wide bowl and top with spinach, beets, tomatoes, cucumber, avocado, and hummus or chickpea meat.
2 Sprinkle with parsley and hemp seeds and serve with tzatziki sauce.
