TRADITIONAL IRISH RAREBIT

225 g/8 oz/2 cups hard Irish cheese, grated

2 teaspoons cornflour (cornstarch)

1 teaspoon mustard powder

2 teaspoons white vinegar

2 eggs

300 ml/½ pint/1¼ cups milk

a pinch of salt and freshly ground black pepper

a dash of Tabasco sauce

4 slices of Irish wholemeal (wholewheat) bread

¼ teaspoon paprika

Mix together all the ingredients except the bread and paprika in a saucepan. Cook over a low heat, stirring constantly, until the mixture is well blended and hot. Remove from the heat and spread the mixture on the bread slices. Grill under a hot grill for a few minutes until golden brown, then serve sprinkled with a little paprika.
