2 HAM STEAKS (7 TO 8 OZ EACH), CUT IN HALF
1 BAG (16 OZ) FROZEN SLICED PEACHES, THAWED, CUT BITE-SIZE
1 JAR (9 OZ) HOT OR SWEET MANGO CHUTNEY
GARNISH: CHOPPED CILANTRO
Heat oil in a large nonstick skillet over medium-high heat. Add ham and cook 4 minutes, turning once, until lightly browned. Remove to a serving platter.
Add peaches and chutney to skillet and cook, stirring, just until hot. Spoon over ham. Garnish with chopped cilantro, if desired.
- Stir some curry powder into the chutney and peach mixture.
- Substitute fresh pineapple chunks for the peaches and add some sliced scallions.
- When in season, use fresh peaches or nectarines. Then grill the ham and serve the sauce cold as a salsa.
