¾ CUP PEANUT SATAY SAUCE (WE USED THAI KITCHEN)
¼ CUP LIME JUICE
1 TSP GRATED LIME ZEST
2 TBSP WATER
¼ CUP CHOPPED CILANTRO OR MINT
NONSTICK COOKING SPRAY
GARNISH: SMALL SEEDLESS CUCUMBERS (OPTIONAL)
Heat stovetop grill pan or broiler. Thread a chicken tender on each skewer.
Mix remaining ingredients in medium bowl. Remove cup sauce to small bowl; use to brush both sides of chicken. Reserve remaining sauce for serving. Lightly coat chicken with nonstick spray.
Grill 2 to 3 minutes per side until chicken is cooked through. Garnish with thick slices of small seedless cucumbers, if using. Serve with reserved sauce.
