Breakfast Hash (Clean eating, Gluten free)

Ingredients:

2 pounds potatoes, peeled, shredded

8 ounces crumbled sausage

2 tablespoons olive oil

2 tablespoons finely chopped basil

1/4 cup chicken broth

Salt, to taste

Pepper, to taste

Directions:

1. Heat olive oil in the pressure cooker using the "brown" or "sauté" button. Add the potatoes, salt and pepper. Cook and stir occasionally for 5 minutes.

2. Add the basil, sausage and chicken broth. Stir to combine.

3. Close the lid and lock. Cook for 7 minutes at high pressure. At the end of the cooking time, quick release the pressure.

4. Serve hot with scrambled eggs and toast.
