Risotto is a not usually a breakfast dish but this one will surely be a hit.
Preparation time: 5 minutes
Cooking time: 25 minutes

Ingredients:
2 tablespoons butter
1 1/2 cups short grain brown rice
2 medium bananas, lightly mashed
1/3 cup brown sugar
1/4 teaspoon salt
1 1/2 teaspoons cinnamon
3 cups light coconut milk
1 cup dry white wine
Chopped walnuts, for garnish
Directions:
1. Melt butter in the pressure cooker using the "brown" or "sauté" button. Add the rice and cook with constant stirring for about 3 minutes.
2. Stir in the bananas, sugar, salt, cinnamon, milk and wine.
3. Close the lid and lock. Cook for 20 minutes at high pressure. At the end of the cooking time, use the Natural Release method. (Cooking time may be more in some pressure cooker models).
4. Serve, garnished with chopped walnuts.
