Great for mornings when you have a lot of work ahead of you.

Ingredients:
2 tablespoons of olive oil
4 eggs
1/2 cup chopped red onion
1 green chili pepper, seeded, diced
12 cherry tomatoes, diced
Salt to taste
1/4 cup water
4 flour tortillas
2 avocados, peeled, pitted, and mashed
1 cup shredded Cheddar cheese
1/4 cup ketchup
Directions:
1. Heat olive oil in the pressure cooker using the "brown" or "sauté" button. Beat the eggs together in a bowl and pour into the pressure cooker. Cook and stir for 2 minutes.
2. Add onion, chili pepper, tomatoes and salt to taste. Pour in 1/4 cup of water.
3. Close the lid and lock. Cook for 7 minutes at high pressure. At the end of the cooking time, quick release the pressure.
4. Microwave flour tortillas for 30 seconds.
5. Lay tortillas, one at a time on a flat surface. Layer 1/4 of the egg mixture, 1/4 of the avocados and 1/4 of the Cheddar cheese on the middle of the tortilla. Repeat with the remaining tortilla then roll them up.
6. Serve with ketchup.
