Ingredients:
1 pound boneless skinless chicken thighs
2 cups dried lentils
7 cups chicken broth
2 leeks, white part only, sliced thinly
1 small onion, chopped
2 tablespoons tomato paste
1/4 cup chopped cilantro
1 teaspoon garlic powder
3 garlic cloves
1/2 teaspoon paprika
1/4 teaspoon oregano
1 teaspoon cumin
1/2 teaspoon kosher salt, or to taste
Grated parmesan cheese for serving
Directions:
1. Combine all the ingredients in the pressure cooker. Stir well.
2. Close the lid and lock. Cook for 30 minutes at high pressure. At the end of the cooking time, use the Natural Release method.
3. Transfer the chicken to a platter and use two forks to shred.
4. Return shredded chicken to the pressure cooker and stir. Serve, sprinkled with cheese.
