Ingredients:
2 cups cooked shredded turkey
1 tablespoon olive oil
5 small carrots, chopped
3 garlic cloves, minced
1 onion, chopped
6 cups chicken stock
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 teaspoon salt
1/4 teaspoon fresh ground pepper
2 medium zucchini, spiralized
Directions:
1. Toss zucchini spirals with some salt, place on a towel and set aside for 15 minutes. After 15 minutes, wring out the liquid through the towel. Set zucchini aside.
2. Heat olive oil in the pressure cooker using the "brown" or "sauté" button. Add carrot, onion and garlic then cook for about 5 minutes.
2. Add the remaining ingredients apart from the zucchini and cooked turkey.
3. Close the lid and lock. Cook for 10 minutes at high pressure. At the end of the cooking time, quick release the pressure.
4. Open the lid then add the zucchini and cooked turkey. Select "sauté" and let cook, uncovered for 3 minutes. Serve.
