Pressure Cooker Shredded Chicken Breast (Clean eating, Gluten free, Paleo, Low carb)

Make shredded chicken ahead for salads, sandwiches and other quick dishes.

Cooking time: 18 minutes

Ingredients:

4-6 pounds boneless, skinless chicken breast

2 cups water

Salt and pepper to taste

Directions:

1. Combine the ingredients in the pressure cooker.

2. Close the lid and lock. Cook for 18 minutes at high pressure. At the end of the cooking time, quick release the pressure.

3. Remove the chicken and shred. Add shredded chicken with some of the cooking liquid to plastic bags and refrigerate.
