Ingredients:
6 boneless chicken thighs
2 tablespoons butter
1/2 medium onion, chopped
1 red pepper, deseeded, chopped
2 large ripe tomatoes, chopped
2 garlic cloves, minced
1 cup uncooked long grain rice
2 1/2 cups water
1 (15-ounce) can red kidney beans, drained, rinsed
Salt, to taste
1/2 teaspoon black pepper
Directions:
1. Melt butter in the pressure cooker using the "brown" or "sauté" button. Add the onions, red pepper and tomatoes then cook for 3-5 minutes. Add garlic and cook for just 30 seconds.
2. Add the chicken rice, water, salt and black pepper to taste.
3. Close the lid and lock. Cook for 6 minutes at high pressure. At the end of the cooking time, quick release the pressure.
4. Open the lid, use a fork to fluff the rice then stir in the beans. If necessary, add more salt and pepper.
5. Serve, garnished with chopped coriander leaves.
