Ingredients:
1 pound ground beef
8 ounces ground pork
1 small onion, minced
1/2 cup almond meal
1 large egg, beaten
1 tablespoon dried oregano
1 tablespoons dried thyme
1 tablespoon minced fresh basil leaves
1⁄2 teaspoon salt
1/4 cup ghee
3 tablespoons arrowroot flour
2 cups beef stock
2 cups water
1⁄2 cup coconut milk
Salt, to taste
Pepper, to taste
1 tablespoon chopped fresh parsley
Directions:
1. In a large bowl, add together the beef, pork, onion, almond meal, egg, oregano, thyme, basil and salt. Mix well.
2. Use your hands to roll into meatballs, about 3/4 to 1-inch size.
3. Melt ghee in the pressure cooker using the "brown" or "sauté" button. Stir in the arrowroot flour then whisk in the beef stock, water and coconut milk. Bring the sauce to a simmer and season with salt and pepper.
4. Carefully add the meatballs to the sauce.
5. Close the lid and lock. Cook for 10 minutes at high pressure. At the end of the cooking time, quick release the pressure.
6. Open the lid carefully and taste for seasoning. If the sauce is too thin, let simmer until thick enough.
7. Serve over vegetable noodles and garnish with fresh parsley.
