Classic Beef Stew (Clean eating, Gluten free, Low carb)

Cook this whenever you want something that will be gobbled up instantly.

Cooking time: 20 minutes

Ingredients:

1 1/2 pounds rump roast or stew beef, cubed

1 tablespoon olive oil

1 large onion, chopped

2 garlic cloves, minced

3 carrots, peeled and cut into 1-inch chunks

1/2 teaspoon dried thyme

3 celery stalks, cut into chunks

1 tomato, chopped

4 potatoes, cut into chunks

Salt, to taste

Black pepper, to taste

1 1/2 cups water

Directions:

1. Heat olive oil in the pressure cooker using the "brown" or "sauté" button. Add the meat and let brown on all sides. Add the onion and garlic then cook and stir for 2 minutes.

2. Add the carrots, thyme, celery, tomato, potatoes, salt, pepper and water.

3. Close the lid and lock. Cook for 15 minutes at high pressure. At the end of the cooking time, quick release the pressure.

4. Serve.
