Ingredients:
4 (1-inch) thick pork chops
2 tablespoons olive oil
1 stalk celery, chopped finely
1 onion, sliced thinly
2 garlic cloves, minced
1/2 pound sliced bacon
3 cups sauerkraut, well drained
2 tablespoons apple juice
1 1/2 cups chicken broth
1/2 teaspoon dried oregano
1 teaspoon dried sage
1/2 teaspoon ground mustard
1/4 teaspoon paprika
1 teaspoon dried thyme
Salt and freshly ground pepper, to taste
Directions:
1. Heat olive oil in the pressure cooker using the "brown" or "sauté" button. Brown pork chops in hot oil then drain.
2. Add the rest of the ingredients to the pressure cooker.
3. Close the lid and lock. Cook for 12 minutes at high pressure. At the end of the cooking time, use the Natural Release method.
4. Taste for seasoning and add more if necessary.
