Ingredients:
2 pork tenderloins, cut into 1 1/2- to 2-inches strips
2 tablespoons olive oil
1/4 cup coconut aminos
1 tablespoon apple cider vinegar
4 1/2 cups chicken stock
1 teaspoon Chinese five-spice powder
1 teaspoon fish sauce
3 tablespoons honey
1/2 teaspoon sea salt
1/2 teaspoon ground black pepper
Directions:
1. Heat olive oil in the pressure cooker. Add pork and brown on all sides.
2. Let cool, then transfer pork and oil to a large zip-top plastic bag. Add the rest of the ingredients, shake well then place in the fridge to marinate for at least 1 hour.
3. Pour the contents of the plastic bag into your pressure cooker.
4. Close the lid and lock. Cook for 120 minutes at high pressure. At the end of the cooking time, quick release the pressure.
