This versatile pork chops can be served with bread, rolls or just about anything you have at hand.

Ingredients:
4 pork chops (bone-in or boneless)
2 tablespoon olive oil
1 small onion, diced
5 medium potatoes, diced
1 carrot, diced
1 cup vegetable broth
1 tablespoon coconut aminos
1 teaspoon lemon juice
1/3 teaspoon hot sauce
Salt, to taste
Pepper, to taste
Directions:
1. Heat olive oil in the pressure cooker using the "brown" or "sauté" button. Brown pork chops on all sides. Transfer to a bowl and season with salt and pepper.
2. Add onions and cook for 2 minutes.
3. Return the browned pork to the pressure cooker. Add the potatoes, carrots, vegetable broth, coconut aminos, lemon juice and hot sauce.
4. Close the lid and lock. Cook for 15 minutes at high pressure. At the end of the cooking time, use the Natural Release method.
5. Open the lid, taste for seasoning and add more if needed Serve.
