No-fuss Braised Pork (Clean eating, Gluten free, Low carb)

Cooking time: 45 minutes

Servings: 6-8

Ingredients:

5 pounds pork butt, cubed

2 tablespoons olive oil

2 cups chicken stock

1 small onion, minced

4 garlic cloves, minced

2 teaspoons cayenne pepper

1 teaspoon paprika

2 cups red wine

1⁄2 cup lemon juice

2 cups chicken stock

Directions:

1. In the pressure cooker, combine pork, olive oil, onion, garlic, cayenne pepper and paprika. Mix well.

2. Add the wine, lemon juice and chicken stock. Don't let the liquid go beyond the maximum fill line.

3. Close the lid and lock. Cook for 45 minutes at high pressure. At the end of the cooking time, use the Natural Release method.

4. Serve with mashed potatoes, rice or noodles.
