Pork Loin And Vegetables (Clean eating, Gluten free, Paleo, Low carb)

Ingredients:

2 pounds boneless pork top loin

3 tablespoons garlic powder

2 tablespoons olive oil

1 cup of water

1 bay leaf

3 potatoes, cubed

3 carrots, sliced

1 onion, sliced

2 celery ribs, sliced

Salt, to taste

Pepper, to taste

Directions:

1. Using a sharp knife, cut short slits, about 2 inches apart on the pork loin. Rub garlic powder, salt and pepper all over the pork loin.

2. Heat olive oil in the pressure cooker using the "brown" or "sauté" button. Add the pork loin and brown on all sides. Remove the meat to a plate and drain excess fat from the pressure cooker.

3. Add 1 cup of water to the pressure cooker and add the bay leaf.

4. Insert the steamer basket then place the pork in the steamer basket.

5. Close the lid and lock. Cook for 35 minutes at high pressure. At the end of the cooking time, quick release the pressure.

6. Open the lid carefully then add the potatoes, carrots, onion and celery. Again, close the lid and lock. Cook for 6 minutes at high pressure. At the end of the cooking time, quick release the pressure.

7. Let stand for 5 minutes then remove the meat and cut to serving sizes.
