Ingredients:
For The Pork:
4 pounds pork butt, cut into large chunks
1 teaspoon garlic powder
2 teaspoons ground mustard
2 teaspoons smoked paprika
1 teaspoon salt
For The Sauce:
2 cups water
4 tablespoons tomato paste
1 cup apple cider vinegar
2 tablespoons brown sugar
1 tablespoon ground mustard
1/2 tablespoon black pepper
1 teaspoon cayenne pepper
1 teaspoon lemon juice
Directions:
1. Season pork with the garlic powder, mustard, smoked paprika and salt.
2. Combine pork with the rest of the ingredients in the pressure cooker.
3. Close the lid and lock. Cook for 60 minutes at high pressure. At the end of the cooking time, use the Natural Release method.
4. Open the lid and drain the cooking liquid, reserving about 2 cups for serving.
5. Shred the meat and serve with the sauce.
