A simple and mild fish dish.
Preparation time: 10 minutes

Ingredients:
4 white fish fillets (cod or halibut)
Extra virgin olive oil
Salt, to taste
Pepper, to taste
1/2 teaspoon garlic powder
1 cup fish stock
1/4 cup finely chopped arugula leaves
1/4 cup finely chopped parsley
1 tablespoon finely chopped oregano
1 tablespoon finely chopped marjoram
2 teaspoons red wine vinegar
1 garlic clove, minced
Directions:
1. Pat fish fillets dry with a paper towel.
2. Rub olive oil on the fillets then season lightly with salt and pepper
3. In the pressure cooker, combine the garlic powder and fish stock.
4. Insert the steamer basket and place the fish on the basket.
5. Close the lid and lock. Cook for 8 minutes at LOW pressure. At the end of the cooking time, quick release the pressure.
6. Meanwhile, in a medium bowl, combine 3 tablespoons olive oil, arugula, parsley, oregano, marjoram, minced garlic and vinegar. Season with a little salt and pepper then toss well.
7. Serve fish with fresh herb sauce.
