Delicious, perfumed rice with great flavor.
Preparation time: 5 minutes
Cooking time: 10 minutes
Servings: 4-6
Ingredients:
1 large pinch of saffron, crushed
2 teaspoons hot water
2 tablespoons butter or vegan margarine
2 cups long grain white rice
3 1/2 cups chicken or vegetable broth
1 teaspoon salt, or to taste
Directions:
1. Dissolve the saffron in 2 teaspoons of hot water, in a small bowl.
2. Melt butter or margarine in the pressure cooker using the "brown" or "sauté" button.
3. Stir in the rice, broth, salt and saffron plus its water.
4. Close the lid and lock. Cook for 5 minutes at LOW pressure. At the end of the cooking time, quick release the pressure.
5. Let sit for about 5 minutes then fluff with a fork.
