Ingredients:
2 tablespoon oil
1 onion, diced
1 cup long grain white rice
2 cups chicken stock or vegetable stock
1/2 teaspoon ground cinnamon
1 carrot, chopped
1 teaspoon salt
2 tablespoon frozen peas
1 tablespoon fresh parsley, chopped
Directions:
1. Heat olive oil in the pressure cooker using the "brown" or "sauté" button. Add the onions; cook and stir for about 5 minutes.
2. Add the uncooked rice; cook and stir for 1-2 minutes. Stir in the chicken or vegetable stock, cinnamon, carrot, salt and peas.
3. Close the lid and lock. Cook for 5 minutes at high pressure. At the end of the cooking time, quick release the pressure.
4. Open the lid, fluff rice with a fork, stir in parsley then serve.
