Quick Turkey Rice Pilaf (Clean eating, Gluten free)

Ingredients:

1/2 pound cooked turkey breast, cut into bite size pieces

2 tablespoons olive oil

1 cup sliced celery

1 onion, chopped

1 cup long grain white rice

2 cups chicken broth

1 large carrot, chopped

1 bay leaf

1/2 teaspoon salt

2 tablespoon fresh parsley, chopped (optional)

Directions:

1. Heat olive oil in the pressure cooker using the "brown" or "sauté" button. Add onion and celery; cook with occasional stirring, about 5 minutes.

2. Add the uncooked rice; cook and stir for 1-2 minutes. Stir in the chicken broth, carrot, bay leaf and salt.

3. Close the lid and lock. Cook for 5 minutes at high pressure. At the end of the cooking time, quick release the pressure.

4. Open the lid, remove the bay leaf and discard.

5. Stir in the turkey breast. Cook, uncovered, for about 2 to 3 minutes (if most of the liquid has been absorbed, add a little chicken broth).

6. Fluff rice with a fork, stir in parsley then serve.
