Quick Mixed Vegetable Soup (Clean eating, Gluten free, Paleo, Low carb, Vegan, Mediterranean diet)

Ingredients:

1 tablespoon olive oil

1/2 large onion, diced

2 celery ribs, chopped

2 carrots, sliced

1/2 red bell pepper, seeded, sliced

2 cups cabbage, diced

1 (14-5-ounce) can diced tomatoes

1/2 cup tomato puree

5 cups beef or vegetable broth

1 teaspoon ground cumin

1 teaspoon salt

1/2 teaspoon black pepper

8 ounces, frozen green beans

1 large potato, peeled, diced

Directions:

1. Heat olive oil in the pressure cooker using the "brown" or "sauté" button. Add onion, carrots and celery. Sauté until tender.

2. Add the rest of the ingredients.

3. Close the lid and lock. Cook for 15 minutes at high pressure. At the end of the cooking time, use the Natural Release method.

4. Carefully remove the lid and serve.
