Ingredients:
6 medium beets
Water
Salt to taste
2 tablespoons olive oil
2 garlic cloves, crushed
2 tablespoons red wine vinegar
Directions:
1. Wash the beets well in water and drain.
2. Place the beets in the pressure cooker, add salt and pour in just enough water to cover.
3. Close the lid and lock. Cook for 18-20 minutes at high pressure. At the end of the cooking time, quick release the pressure.
4. Strain out the beets, peel and slice into pieces.
5. Toss beet slices with olive oil, garlic and vinegar. Add more salt if necessary.
