Steamed Spiralized Carrot (Gluten free, Vegan, Mediterranean diet)

Ingredients:

1 pound of carrots, peeled, spiralized

1 cup water

1/4 cup brown sugar

1/4 cup margarine

2 teaspoons lemon juice

1/2 teaspoon cinnamon (optional)

1/4 teaspoon nutmeg (optional)

Directions:

1. Place the carrot spirals in the steamer basket. Add one cup of water to the pressure cooker then insert the steamer basket.

2. Close the lid and lock. Cook for 4 minutes at LOW pressure. At the end of the cooking time, quick release the pressure.

3. Immediately remove the steamer basket so that the carrots will stop cooking. Remove carrots and set aside.

4. Drain off most of the cooking water, leaving just enough to cover the bottom of the pan. Stir in the brown sugar and margarine.

5. Let simmer until the margarine melts. Add the carrots, lemon juice, cinnamon and nutmeg then stir to coat. Cover the pressure cooker and let the flavors blend for 5 minutes in the residual heat. Serve.
