2 cups dried pinto beans, sorted, rinsed (You don't have to soak)
2 tablespoons vegetable oil
1 medium onion, chopped roughly
4 garlic cloves, chopped roughly
1/2 cup chopped cilantro
1 teaspoon cumin
1/2 teaspoon chipotle powder
1 teaspoon paprika
3 1/2 cups water
Salt, to taste
Directions:
1. Heat olive oil in the pressure cooker using the "brown" or "sauté" button. Add the onion, garlic and cilantro. Cook and stir until onions are tender.
2. Stir in the beans and remaining ingredients.
3. Close the lid and lock. Cook for 35 minutes at high pressure. At the end of the cooking time, use the Natural Release method.
4. Taste the beans and adjust seasoning as necessary. If you want it very thick, drain some of the cooking liquid.
5. Mash with a potato masher or immersion blender until smooth.
