This side dish is full of fiber and calcium and is a great accompaniment to any main dish.

Ingredients:
1 head broccoli, cut into florets
1 tablespoon lemon juice
1 cup water
1/4 cup raisins
1/4 cup dried cherries
2 garlic cloves, minced
1 medium onion, chopped finely
1 teaspoon olive oil
2 tablespoons red wine vinegar
1/8 teaspoon cayenne pepper
Directions:
1. Pour water and lemon juice into the pressure cooker then add the broccoli.
2. Close the lid and lock. Cook for 2 minutes at high pressure. At the end of the cooking time, quick release the pressure.
3. In a large bowl, combine raisins, cherries, garlic, onion, olive oil, vinegar and cayenne pepper. Mix together very well.
4. Add the broccoli and toss.
