Simple Potato Salad (Clean eating, Gluten free)

The pressure cooker provides an easier and quicker way to make delicious potato salad.

Servings: 4

Ingredients:

5 medium potatoes

1 cup water

4 green onions, finely chopped

1⁄2 cup mayonnaise

1 small lemon, juiced

1 tablespoon mild paprika

2 teaspoons garlic powder

2 hard-boiled eggs, sliced

3 teaspoons chopped fresh dill

Salt, to taste

Pepper, to taste

Directions:

1. combine potatoes with 1 cup of water in the pressure cooker.

2. Close the lid and lock. Cook for 4-5 minutes at high pressure. At the end of the cooking time, quick release the pressure.

3. Let the potatoes cool then peel and cut into bite size pieces.

4. In a medium bowl, combine onions, mayonnaise, lemon juice, paprika, eggs, dill, salt and pepper.

5. Mix potatoes with the sauce then refrigerate for about 1 hour before serving.
