Easy Steamed Artichokes (Gluten free, Paleo, Low carb, Vegan, Mediterranean diet)

A delightful appetizer that is ready in minutes.

Preparation time: 5 minutes

Cooking time: 10 minutes

Servings: 4

Ingredients:

2 medium artichokes

1 lemon, cut in half

1 tablespoon lemon juice

1 garlic clove

1 bay leaf

1 teaspoon Dijon mustard

2 tablespoons mayonnaise

1/2 teaspoon lemon zest

1/4 teaspoon ground black pepper

Directions:

1. Wash the artichokes, remove damaged leaves, cut off the top edge and trim off the spines on surrounding leaves. Wipe a lemon edge on all cut edges to prevent oxidizing.

2. Add 1 cup of water, the garlic and bay leaf to the pressure cooker. Insert the steamer basket. Place artichokes in the steamer basket then drizzle with lemon juice.

3. Close the lid and lock. Cook for 10 minutes at high pressure. At the end of the cooking time, use the Natural Release method.

4. Taste one of the artichoke leaves to check for doneness. If not done, cook for additional 5 minutes at high pressure.

5. In a small serving bowl, mix together the mustard, mayonnaise, lemon zest and black pepper.

6. Serve artichokes warm, along with the dip.
