Chicken Liver Spread (Clean eating, Low-carb)

Ingredients:

1 pound chicken liver

2 tablespoons cup butter

1 onion, chopped

1/4 teaspoon thyme leaves

1/4 cup red wine

1/4 cup water

1⁄2 teaspoon salt

1⁄4 teaspoon pepper

Directions:

1. Melt butter in the pressure cooker using the "brown" or "sauté" button. Add onion and cook until soften. Season with a little salt and pepper.

2. Add the chicken livers and thyme. Cook and stir for about 2 minutes.

3. Stir in the red wine and water. Scrape up any browned bits from the bottom of the pressure cooker.

4. Close the lid and lock. Cook for 4-6 minutes at high pressure. At the end of the cooking time, quick release the pressure.

5. Use an immersion blender to puree everything.

6. Taste and adjust seasoning as necessary.

7. Transfer to a serving dish and garnish with fresh herbs. Serve with toasted whole grain bread.
