Cornbread Under Pressure (Clean eating, Mediterranean diet)

Servings: 6-8

Ingredients:

1 1/4 cup cornmeal

1 cup whole grain flour

2/3 cup white sugar

1 tablespoon baking powder

1 teaspoon salt

2 eggs

1 cup milk

4 tablespoons butter, melted

Directions:

1. Whisk the eggs in a small bowl. Add the milk and butter then mix together.

2. In a large bowl, combine all the dry ingredients.

3. Pour the liquid ingredients gradually into the dry ingredients and mix until just blended.

4. Grease a pan (that can fit into your pressure cooker) then pour the batter into it, about 2/3 full. Cover the pan with a grease foil. Make a foil handle for removing the pan from the cooker.

5. Add 1 cup of water to the pressure cooker and insert the trivet. Place the pan on the trivet.

6. Close the lid and lock. Cook for 18 minutes at high pressure. At the end of the cooking time, use the Natural Release method.

7. Remove and let cool in the pan on a wire rack. Serve warm.
