Steaming the pumpkin in the pressure cooker helps to preserve more of the flavor.
Preparation time: 5 minutes
Cooking time: 20 minutes
Servings: 10
Ingredients:
2 small sized pumpkins
1 cup of water
1 tablespoon of sugar (omit for paleo)
1/8 teaspoon cinnamon
1/8 teaspoon salt
Directions:
1. Peel the pumpkins, cut open then scoop out the seeds and pulp. Reserve the seeds for roasting later. Cut pumpkins into chunks.
2. Add 1 cup of water to the pressure cooker.
3. Place pumpkin chunks in the steamer basket and insert the basket in the pressure cooker.
4. Close the lid and lock. Cook for 15-20 minutes at high pressure. At the end of the cooking time, quick release the pressure.
5. Transfer the pumpkin into a bowl and add the sugar, cinnamon and salt.
6. Use an immersion or regular blender to puree until smooth.
7. Let cool then store in plastic bags (one cup per bag) in the freezer.
