BAKED TREATS

Baking teatime treats can be wonderfully satisfying. The aromas that envelop the kitchen and the bakes that come out of the oven seem almost magical. And perhaps even more so when you’re cooking without gluten or dairy. The key to success is the mixture of flours. Many of these recipes use my Biscuit Mix, for example. I find the combination of brown rice flour, cornstarch and almond meal produces the right amount of crunch, depending on how long you bake them. Turn the oven on, line up the ingredients, and start mixing – it’s good for the soul! Whip up gorgeous, fresh Doughnuts, for example, or moreish Salted Caramel Flapjacks. Dive into rich Mango and Hazelnut Florentines or Millionaire’s Shortbread, or make a little piece of heaven with Strawberry Shortcakes or Macarons.
