Bruschetta (pronounced broo-SKEH-tah) are like the rustic cousins to crostini. These toasts are thicker in width, larger in diameter, and are toasted on a grill rather than in the oven. Bruschetta dates back to the fifteenth century.
Makes 6 to 8 | Prep time: 10 minutes | Start to finish: 20 minutes
6 to 8 slices rustic Italian bread, 3/4-inch thick and 3x4 inches in size
1/4 cup olive oil
1 garlic clove, halved
1. Light a charcoal or gas grill, or preheat the oven broiler.
2. Grill or broil bread for 1 to 2 minutes per side, or until brown. Brush both sides of toasts with olive oil, and rub one side of toasts with cut surface of garlic clove.
Note: The toasts should not be prepared more than 2 hours in advance.
Variation:
Substitute melted butter for the olive oil, and sprinkle toasts lightly with freshly grated Parmesan cheese in addition to rubbing them with garlic.
