MARINATED SUMMER SQUASH RIBBONS
With the abundance of yellow squash during the summer, I’ve come up with countless ways to prepare it. Now you have a new way. This is a great recipe to take to an outside event because there is no cooking involved and no temperature requirement.
4 medium summer squash
¼ cup extra-virgin olive oil
2 tablespoons fresh lemon juice
2 teaspoons honey
½ teaspoon salt
¼ teaspoon ground black pepper
1 clove garlic, finely chopped
2 tablespoons chopped fresh parsley
Using a vegetable peeler or mandoline, thinly slice the squash lengthwise. Place the slices in a large bowl. In a small bowl whisk together the oil, lemon juice, honey, salt, pepper, garlic, and parsley. Pour the dressing over the squash, and toss together gently. Refrigerate the dish for at least 30 minutes before serving it.
MAKES 4 TO 6 SERVINGS.
