PEANUTTY CAULIFLOWER SALAD

Who would have ever thought that peanuts and cauliflower would go so well together. But don’t take my word for it; try this salad. I like to bring it to picnics or barbecues when other guests have already signed up for all the “staple” side dishes.

1 head cauliflower

½ cup lightly salted peanuts

½ cup golden raisins

3 tablespoons fresh lemon juice

1 tablespoon honey

2 tablespoons extra-virgin olive oil

2 tablespoons chopped fresh parsley

¼ teaspoon salt

¼ teaspoon ground black pepper

Break off or cut the cauliflower into small florets. Place the florets in a large bowl, and add the peanuts and raisins. In a small bowl whisk together the lemon juice, honey, oil, parsley, salt, and pepper. Pour the dressing over the salad, and toss everything together until it is well coated. Serve the dish at room temperature, or refrigerate until you are ready to serve it.
