GRILLED WATERMELON WITH SWEET BALSAMIC SYRUP

With the abundance of fresh watermelon during the summertime, it’s easy to get creative in using the sweet melon. Grilling watermelon allows it to caramelize, and the balsamic syrup adds a punch of tangy flavor.

½ cup balsamic vinegar

1 tablespoon honey

½ teaspoon finely grated orange peel

6 cups 2-inch cubes watermelon

½ cup crumbled blue cheese

Place the balsamic vinegar, honey, and orange peel in a small saucepan, and bring the mixture to a low simmer over medium heat. Cook until the vinegar is reduced by half. It should have a syrupy consistency.

Heat the grill to medium-high heat. Once the grill is hot, grill the watermelon cubes for about 2 minutes, turn, and grill for 2 more minutes, or until grill marks are formed. Place the melon on a large serving plate, and drizzle with the reduced vinegar. Sprinkle with blue cheese, and serve immediately.
