“COUNTRY CATCH OF THE DAY” STEAMED TROUT

One of the things my dad is looking forward to doing with my son when he gets older is taking him fishing for the first time. I used to love going with my dad and then coming home to grill our “catch of the day.” Since trout is a delicate fish, steaming it in foil on the grill is a foolproof way to prepare it.

4 (6- to 8-ounce) trout fillets

2 tablespoons extra-virgin olive oil

¾ teaspoon salt

¼ teaspoon ground black pepper

1 large shallot, thinly sliced

1 tablespoon fresh thyme

1 lemon, thinly sliced

¼ cup dry white wine

Heat the grill to medium-high heat. Place each trout fillet in the center of a square of aluminum foil. Drizzle the olive oil evenly over each fillet, and then sprinkle with the salt and pepper. Arrange the sliced shallots and thyme on top of the fillets, and then top each with 2 slices of lemon. Pour a splash of the wine on the top of each fillet. Fold the foil over the fillets to create packets.

Place the packets on the grill, and close the lid. Grill them for 6 to 8 minutes, depending on the size of the fillets. Open the packets, and serve the fish immediately.

MAKES 4 SERVINGS.
