CARAMELIZED VIDALIA ONION AND SPINACH DIP

Creamy spinach dips have always been one of my weaknesses, and this is one I just can’t get enough of. By adding the caramelized Vidalia onions, you get a wonderful sweetness that matches perfectly with the tangy cream cheese and savory spinach.

1 tablespoon butter

1 ½ cups thinly sliced Vidalia onion

1 (10-ounce) box frozen spinach, thawed and squeezed dry

1 (8-ounce) package light cream cheese

1 cup low-fat or whole milk

½ cup freshly grated Parmesan cheese

¼ teaspoon garlic powder

½ teaspoon salt

¼ teaspoon ground black pepper

Tortilla chips, for serving

In a large skillet melt the butter over medium-low heat. Add the onions, and cook, stirring occasionally, until they are golden brown, for about 30 minutes.

Add the spinach to the skillet, and stir until the spinach wilts. Reduce the heat to low, and add the cream cheese and milk. Stir until the cream cheese melts and combines well with the spinach. Add the Parmesan, garlic powder, salt, and pepper. Stir to combine well. Remove the skillet from the heat, and spoon the dip into a large bowl. Refrigerate until ready to serve with tortilla chips.

MAKES 6 TO 8 SERVINGS.
