The Mindful Kitchen was founded in 2016 by New York State native Heather Thomas, who now lives in Copenhagen, Denmark. Heather’s MBA thesis at Copenhagen Business School on the business of food waste led her to open an eco-friendly eatery in the city’s popular Vesterbro district. She soon discovered that what guests were really hungry for was help and advice on learning how to adopt more eco-friendly habits. In response, she developed The Mindful Kitchen, which offers people a path to greater well-being for both people and the planet by building a nature-related practice.
To spread the process of how to connect to nature with every bite, Heather has worked with eco-chef Tom Hunt, Havana Club, Sustain (a UK-based alliance for better food and farming), and with the Eden Project in Cornwall, UK. She has also trained in climate-change communications with Al Gore and the Climate Reality Project he founded.
