CRANBERRY CHIP PANCAKES

A few simple ingredients make for pancakes so luscious you may not reach for the syrup!

Takes: 25 min. Makes: 6 pancakes

1/2 cup fresh or frozen cranberries

1 cup water, divided

1 cup complete pancake mix

1 tsp. grated orange zest

1/4 cup orange juice

1/4 cup white baking chips

1. In a small saucepan, cook the cranberries and 1/2 cup water over medium heat until berries pop, about 10 minutes.

2. Meanwhile, in a large bowl, combine the pancake mix, orange zest, orange juice and the remaining water just until moistened. Fold in chips. Drain cranberries; fold into the batter.

3. Pour batter by 1/4 cupfuls onto a greased hot griddle; turn when bubbles form on top. Cook until second side is golden brown.

3 pancakes: 368 cal., 9g fat (4g sat. fat), 4mg chol., 853mg sod., 66g carb. (24g sugars, 3g fiber), 8g pro.
