LOW-FAT TANGY TOMATO DRESSING

This zesty blend is delicious over greens, pasta or fresh garden vegetables. I love that it’s a healthier alternative to the oil-heavy versions sold in stores.

Takes: 5 min. • Makes: 2 cups

1 can (141/2 oz.) no-salt-added diced tomatoes, undrained

1 envelope Italian salad dressing mix

1 Tbsp. cider vinegar

1 Tbsp. olive oil

Place all ingredients in a blender; cover and process until blended.
