LEMONY ZUCCHINI RIBBONS

Fresh zucchini gets a shave and a drizzle of lemony goodness in this fabulous salad. Sprinkle on the goat cheese or feta and dive right in.

1 Tbsp. olive oil

1/2 tsp. grated lemon zest

1 Tbsp. lemon juice

1/2 tsp. salt

1/4 tsp. pepper

3 medium zucchini

1/3 cup crumbled goat or feta cheese

1. For the dressing, in a small bowl, mix the first five ingredients. Using a vegetable peeler, shave zucchini lengthwise into very thin slices; arrange on a serving plate.

2. To serve, drizzle with dressing and toss lightly to coat. Top with crumbled cheese.
