BLACK BEAN SALAD

This salad goes wonderfully with chicken and Mexican main dishes and a great choice when you need something quick for a potluck.

Prep: 5 min. + chilling Makes: 8 servings

2 cans (15 oz. each) black beans, rinsed and drained

11/2 cups salsa or pico de gallo

2 Tbsp. minced fresh parsley or cilantro

Combine all ingredients in a bowl. Chill 15 minutes before serving.
