TROPICAL BEEF WRAPS

For my finicky little ones, I create fast, tasty recipes like this tropical sandwich wrap. I usually use roast beef I buy from the deli, but it's a great way to use up leftover roast beef, too.

Takes: 15 min. • Makes: 4 servings

1 carton (8 oz.) spreadable pineapple cream cheese

4 flour tortillas (10 in.)

4 cups fresh baby spinach (about 4 oz.)

3/4 lb. thinly sliced deli roast beef

1 medium mango, peeled and sliced

Spread cream cheese over the tortillas to within 1 in. of edges. Layer with spinach, roast beef and sliced mango. Roll up tightly and serve.
