SMOTHERED BURRITOS

My brother-in-law thought I knew how to make only five things using ground beef. To prove him wrong, I came back with these burritos. Now it's his turn to cook!

Takes: 30 min. • Makes: 4 servings

1 can (10 oz.) green enchilada sauce

3/4 cup salsa verde

1 lb. ground beef

4 flour tortillas (10 in.)

11/2 cups shredded cheddar cheese, divided

1. In a small bowl, mix enchilada sauce and salsa verde.

2. In a large skillet, cook beef over medium heat until no longer pink, for 8-10 minutes, breaking into crumbles; drain. Stir in 1/2 cup of the sauce mixture.

3. Spoon 2/3 cup of the beef mixture across the center of each tortilla; top each with 3 Tbsp. cheese. Fold bottom and sides of tortilla over filling and roll up.

4. Place the burritos in a greased 11x7-in. baking dish. Pour the remaining sauce over top; sprinkle with the remaining cheese. Bake, uncovered, at 375°until cheese is melted, 10-15 minutes.
