The ingredients for this yummy dish are easy to keep on hand. Serve with a dash of soy sauce and a side of fresh pineapple slices. You can also try it with ground turkey instead of beef.

1 lb. lean ground beef (90% lean)
2 pkg. (3 oz. each) ramen noodles, crumbled
21/2 cups water
2 cups frozen broccoli stir-fry vegetable blend
1/4 tsp. ground ginger
2 Tbsp. thinly sliced green onion
1. In a large skillet, cook beef over medium heat until no longer pink; drain. Add the contents of one ramen noodle flavoring packet; stir until dissolved. Remove beef and set aside.
2. In the same skillet, combine the water, vegetables, ginger, noodles and the contents of the remaining flavoring packet. Bring to a boil. Reduce heat; cover and simmer until the noodles are tender, for 3-4 minutes, stirring occasionally. Return beef to the pan and heat through. Stir in the onion.
